Thanks for poking @vonj! What I am looking for is using CUPS only as a printer queue/proxy, without needing to have a driver installed in CUPS. I don't even know if that makes sense tbh. What I have experienced with my Epson printer is that the Windows drivers produce better results, that is the only reason why the printer is still hooked up to a Windows machine. And the other reason is that I need to scan documents from time to time, which is just very easy to do with Windows.
I came across this when searching and it seems interesting, maybe it will help others. For now my setup works fine and I don't feel like investing too much time to change it. Also you might want to look into "print everywhere" which is somehow based on AirPrint.
