Name all code chunks #13

The PR (and pair of commits) names all R code chunks, removes obsolete and untrackable (properly) figures, replacing them with trackable ones (assuming we don't rename the code chunks!).

This addresses issue #12 but differently because Simon moved the examples around between me commit those original changes and my finding time to check this all worked on my laptop with up-to-date pandoc.

No worries @SimonGoring (I was locked out of my laptop for a couple of nights as I'd left my stupid password dongle at work, hence the delay in dealing with this issue.)
