what app version are you using?
Use material files when you copy pictures from internal memory to memory card until it fixes the problem. I tested copying photos with simple gallery and simple file manager latest versions and both have the bug on android 11. When you copy them it uses the modification date , not the created date.
I copied files (JPG taken with the phone camera) from the internal memory of my phone to the SD card. The resets every file timestamp to current time. No trouble, I think: I put the SD card on my Linux machine and set all files mtime back to their original value (using EXIF metadata).
Now the SD card is back in the phone, but when I use sort files by modification time in Simple File Manager, they still appear incorrectly sorted (I think I also erased the App Cache from Android app settings) and displayed date is not the corrected timestamp. Nevertheless, using Material Files, the files are sorted as intended, and displayed modification time is the corrected time I set from my computer.
So I go to Windows and use a tool to also correct the creation time metadata on every file of the exFAT formatted SD card.
The SD card is back in the phone again and files are sorted as intended, dates on files are displayed as intended as well.
Would you please use the file modification (and not creation) timestamp in Simple File Manager? (if the behaviour is not related to Android)

PS: it might be, that I just made a mistake when doing my tests, like looking at the phone files instead of the SD card files... but I don't think so.
