This is likely a bug associated with 3.0 of DND5e, which is still not supported. I'll add it to the list of tests for the next version.

Despite the listed Max HP on the Monster Maker version of the sheet, it is impossible to set the monster's current HP to be above what is set as the max HP on the Default 5e NPC Sheet. I believe this is one of the incompatibility issues caused by the 5e 3.0.0 update.
For now, it is possible to circumvent this issue entirely by manually adjusting the max HP on the Default sheet, such as by setting it to an obscenely high value so that the max HP cap won't get in the way for scaling monsters.
