refactor: clean up builder tests

• added helper functions for testing yargs builder-type functions in builder-mock.ts
• updated builder tests to use new functions from builder-mock.ts
• added unit test for untested builder functions
• updated const someMock: jest.Mock<SomeType> = jest.fn() to const someMock = jest.fn<SomeType>() using regex search and replace const (\w+): jest\.Mock(<.*>) = jest\.fn\(\) to const $1 = jest.fn$2()
• fixed input type for inputAndOutputItemBuilder
• ignore colors.ts for coverage purposes since it doesn't have any logic in it
