This should probably only concern the "local" accounts, not the Social Login logic.
Google and Facebook already explain what data will be sent, based on data being required by the platform (we keep it to a bare minimum).
There is also a possibility to add links to "Privacy Policy" pages within the integration "apps" of those services. Meaning, users will be introduced to the Privacy Policy on the Identity Provider side.
This relates to #216 and requires the outcome of that to use as a base.
