Formatting & wording tweaks for Vehicle Update changes

VehicleAsset documentation is still a lot to navigate. But I've adjusted the formatting/ordering of some stuff in it for now. Will likely reorganize more of it when adding Unity info to the page (or when converting property list to datatable format).

Added doc for EAssetType enum. Currently, only the redirector page links to it.

Looks like good edits to me, thanks! Only two revisions I'd like to suggest:

• I think EEquipableModelParent accidentally carried over the descriptions from EUseableType!
• The EAssetType description, while technically correct, could be misleading when there's so many uses of the word Type. More accurately, I'd describe it as a scope/namespace/category for Legacy IDs. Each Legacy ID is unique within an EAssetType. It's only used in older code or for backwards compatibility - i.e., new code shouldn't be introducing new uses of EAssetType.

• True. Edited per above, mostly verbatim: The EAssetType enumerated type is used as a scope for legacy IDs. Each legacy ID is unique within an EAssetType (allowing multiple assets to share the same legacy ID when they are different types).
