bookdowncourses use CC. You can use the "license chooser" to help decide. CSU Ventures also has opinions on this, as I am sure you know. They don't support or defend open source licenses, but, if you are planning on selling this course to a MOOC platform like Coursera, you might want to talk to CSU Ventures first.
