extract_openlineage has hard-coded values that can be configurable #12

When I tried the example, my Snowflake user didn't have permissions to create a new database (OPENLINEAGE) so I created the FOOD_DELIVERY schema in the database I had. However, extract_openlineage.py has the values hard-coded.
