Refactored functions into descriptively named files

Preparing for adding more tests. Refactored functions into a file with a more detailed/descriptive name.

Also added a few tests for functions in the helper file.

You must have in background the following things :

• the code actually covers both chats and it is not clear that your new function files are only covering the longChat pane
• the shortChat pane needs to be updated to include not many but some of the improvements made to the messages (this as to be discussed but I'm thinking of edit and delete, or reply but not threads or the message signature)
• the chat-threads branch is the next longChat version. This branch is containing the changes needed for Threads and Matrix compatibility. with your refactoring the branches are incompatible

To increase clarity, I suggest retitling this PR to refer to descriptively — rather than descriptive — named files

@bourgeoa thank you for pointing these out. I indeed did not look at the chat-threads branch. I will close this out for now until chat-threads is ready. We can discuss tomorrow in case there is something else I can do to add tests perhaps to the chat-threads? Otherwise I can work on some of the other issues assigned to me.
