Upgrade to WildFly 11.0.0.Final #975

Update our documentation to refer to WildFly 11 instead of 10.1, and update our build to compile with the version of Hibernate bundled with WildFly 11.

I've been using WildFly 11 for dev since December without incident, and we're using WildFly 11 for our Jenkins integration tests.

I still need to:

After merging, we should notify the mailing list of the upgrade.

I've updated the demo and CI servers, and documented exactly what I did in SVN. I also checked in with the active devs, and they were either already on 11 or are now on 12 or 13. I think we're ready to merge this once it's been reviewed!

I posted a message to the mailing list urging people to upgrade. Merging now.
