It's supposed to boot into recovery...that's where you can install macos.
No, I created the VM with macinabox, it booted, I selected macos installer, it installed mac to the apfs formatted drive, I rebooted, selected the drive with big sur installed, it loads a bit then pushes me into recovery.

Not sure if this is the same issue I've had, but I had to keep selecting the BigSur/Installer volume about 5 times until it finally loaded. I assume these are reboots, but it's not handing them automatically.
Yes indeed. You need to select "macOS installer" when the recovery finishes. After a couple reboots the name will change to the volume name you set. Then choose that option.
Recently got unraid running on server, decided I wanted to try out Mac, so I found Macinabox, followed an older tutorial (got me mostly what I needed, and I figured out the rest best I could) and it mostly worked, but after installing, it boots into recovery when I select the Base System boot device, not sure what info you need, but here is the xml:
I can provide whatever other info is needed upon request.
