[Build] CI refactor

Description

Refactor CI pipeline to improve consistency and remove redundancy.

• Deleted all workflows, but ci.yml;
• Made the workflow to update native binaries on every push to the main;
• Made the Gradle to take the version number from the git tag (gradle.properties was removed);
• Added to the jars MANIFEST more built information:
  • Implementation-Title
  • Implementation-Version
  • Build-Timestamp
  • Build-Revision
  • Build-Jdk
  • Created-By
• Added vendor/ folder with freetype library: downloading from the internet fails sometime.
