Of course it is. No affect to GBC / GBA / GBASP screen.
Jepp, that's why I was so confused about it and that's where we somehow managed to talk about entirely different things... The word "mode" in "Black & White mode" made me think that you were talking about some feature that you used, sorry.
But unfortunately, the answer remains the same: When a game that supports color mode (either a pure GBC game or a hybrid one that also works on the DMG) is used on a GBC or GBA, it is always running in color mode and that is not supported by the Interceptor. If the Interceptor still manages to show anything, then it is because the game has not yet done anything that triggers a crash. The crash usually occurs when the game switches to double speed mode as the rp2040 cannot keep up with that - until then anything you see could look okay, but will probably already have a few glitches as no GBC-specific features are supported by the GB Interceptor. It really depends on what the game uses up to this point. And yes, if anything reasonable is shown, it will be in black and white, because the color registers are also not implemented.
Unfortunately, I do not know of any way to run a color game in DMG mode on a GBC or GBA, so there is no way around it. Hybrid games only work on a grayscale Game Boy, because that actually executes different code and will never enter double speed mode.

Couldn't see Pocket Bomberman on any list of tested games, so I can confirm that it does work apparently flawlessly with the GB Interceptor. It's a hybrid game so won't work when used with a GB Color, but perfect on a DMG. Tested with OBS. I think I have a few other games not listed in the compatibility list so I'll check those out soon.

I've been through my collection and tested the following games not already named on the compatibility list, using a DMG and the GB-Interceptor displaying in OBS. Firmware version 1.1.0. All games are original GameBoy games (no GBC-hybrids) and they all seem to display correctly through the Interceptor.
Thanks, I have added them to the list. I also removed the "Capcom" label in the list. I am no expert in different version of the same game, but it seems like there was a DMG-WS-USA and a DMG-WS-USA-1, which seem to be the same game, but one was published by Capcom and one directly by Nintendo (?). Anyhow, I am not keeping track of different versions in that list, especially since I am not aware of a case where one version of the same game works and another doesn't - so it's only "Star Wars" now.
TMNT Fall of the Foot Clan is not without issue like stated in the compatibility chart. The text in the intro, and the scenes between levels is flickery and just downright broken.
Different USB-C cables don't affect it at all. I don't have an original cart, this is off an Everdrive X3
