chore(colors): remove v1 color output and references #1664

This PR removes all references and output of all legacy v1 colors, with the exception of the migration guide.

I don't know how to test for this other than I don't see it in the Stacks docs anymore 🎉

I've merged develop into this branch, resolved conflicts, and re-re-reviewed this PR. I think it's solid and good to merge, so I'm gonna merge this so it can go out in the upcoming v2.4.0 release. If for any reason we need to save this for a future release, let me know and I'll roll it back.
