This pull request updates README and start script to use the correct image name (st2chatops instead of hubot).

I assume repo / image was renamed from hubot at some point, but readme and start script was never updated.

Yeah, either works for me. But having docs in a single place is better and less chance of some place getting out of sync (like this repo).
