We also need a "scientist" that needs to collect the data to apply algorithms and measurements and statistics. That would be user 6. I don't know if we can think of someone else.

They are separated to differentiate perspectives, the owner of the restaurant (user-6) also creates content and the user (user-3) consumes it. Both focus on gluten free services. I do not know if they are different enough to differentiate them. @JJ

Perhaps including the rest of the allergens in story 6, because the owner of the restaurant should consider all the allergens.

Can user 2 and 8 be merged?

One of the specifications consist on processing polyphenols database in order to get a simple representation of the data. We need another user to cover this.

Create an user who needs a data dump of Italian, English, German, Greece, Spanish and Netherlands databases. (At the end, we have to fusionate the databases)

Do you mean to add more responsibilities to the data scientist (user 8)? I think there are different interests in this users, maybe it's better to have two users in order to get all the needs of the users.
