Some missing dependencies in the README
Tests are failing

Add requirements.txt with all needed dependencies
Update README with additional instructions
Add Notebook to demonstrate current output & current failing test.

@jbdel did you have a chance to identify why the tests here are failing to get this PR merged? I can imagine adding a small continuous integration (CI) setup here using GitHub Actions that ensures that we don't have any regressions in the future?
