Consider switching markdown-it -> remark #33

This is because I may I end up writing some of my own extensions (e.g. for glossary, tabs), and remark would be usable with Astro as well . . .

Except it seems to rely heavily on the directives plugin, and that's just nasty

No, decided against. Remark is getting so far from any standard, it would massively lock people in. This is another argument for Asciidoc, as it would give almost everything I want (only missing code tabs really), and conform to a well-maintained standard. Much easier to migrate in/out.
