how does this compare to Firefox Sync Server

This allows multi-browser support, as well as Nextcloud sync. Firefox Sync Server is another good choice, however it requires a Firefox Accounts Server. This means either using Mozilla's server for an account, or also packaging the Accounts Server for Embassy

Upon further examination, this is a client-side only project. It can use any webdav server as a backend, but it does not have it's own.
