I have spent hours on end trying to run this with docker ubuntu and still don't understand it, can you add a yt video on how to do this?

Are there any workarounds?

no.

Additional Context

I keep getting a error at the end about a file not existing.

Where exactly are you getting stuck? If you use docker-compose, it's pretty straight forward.
