There is an option to download the thumbnail of the video, that should do the trick, no? (https://github.com/StefanLobbenmeier/youtube-dl-gui/wiki/Settings#save-thumbnail-as-file) Otherwise I would recommend some music player software to automatically fetch music metadata like the album cover.
