The only way to counter that would be to have another tailor come in and try to undercut the sales.
But your right, tailors are kind of op when it comes to items. Remember that boots and backpacks don't break down, so if you have 20 players on a server the most the tailor can sell is 20 work boots. once they sell all the players work boots, that's all they can sell.
Tailors are only need to collaborate with butchery, to make products. but everyone is dependent on the tailor for rugs, cloth and such. The tailor can only drive the market for sales until no one needs their product anyone.
The tailor needs food for himself and more advanced tailoring products need lumber (and even some screws I believe).
I've noticed playing on white-tiger, that a butcher teaming up with a tailor can really corner the marker on high-collab to very-high collab. Being able to sell both meat, and highly demanded backpacks & workboots is a major advantage. Whilst anyone who doesn't buy into better backpacks and boots has a disadvantage for pretty much any activity except pure crafting.
I don't know how to solve this other than making tailors more dependent on other professions and forcing more collaboration.
