cleanup keyboard and joystick schematics #3

Screenshot from 2020-10-25 16-10-33 I started out doing the easy fix, but the symbols were at 5 mil grid, and it was hard to work. I ended up redrawing the schematics. Less crisscross and more flow. Try open it in KiCad before merging the pull request. I'm using KiCad 5.1.5.
