The original Chisel mod had a feature tied to it where you could place a block in the Chisel, pick a variant, then hit any blocks matching the source block in the world to change them into the chosen variant; (ex. selecting Cracked Stone Bricks in the chisel and hitting any stone block would change it to that variant) You could also just pick nothing in the chisel and hit a chisel-able block with it, and it'd cycle through its options. Higher-tier chisels also had column/row/panel and contiguous 2D/3D chiseling options. It made building and decorating more efficient, more fun, and made your inventory less cluttered.
Describe the solution you'd like
At the very least, the ability to hit matching source blocks to change them into the chosen variant. Ideally 1:1 parity would be nice. You could even improve upon the original by maybe allowing the player to select multiple variants that the chisel would pick at random when hitting blocks, as a similar function to Effortless Building's Randomizer Bag. I don't know how far out-of-scope this all is though, but it'd make the chisel a lot more efficient to use!
