Unable to update from Catalina to Monterey or Launch Monterey Installer #252

Hello, I've finally migrated from Clover to OpenCore (0.7.6) and I was able to boot my previous Clover-based Catalina 10.15.7 install.

Since I have a Gigabyte B360M board and a Radeon RX 5500XT, I've used the Clover Config available here: https://github.com/SuperNG6/MSI-B360-Big-Sur-EFI/releases/download/12.1/AMD.5700XT+IGPU.iMac19.1.zip

However, with my current EFI setup I'm not able to either install Monterey via the installer update or to launch the installer via USB stick.

When I boot into the update partition I get the process hanging (see opencore-2022-01-10-231930.txt) ... when I try to launch the USB Installer (for a fresh install) I get a Kernel panic (see files opencore-2022-01-10-230001.txt and panic-2022-01-10-230001.txt).

My setup is described on my signature, my SSD is a NVME Western Digital WDS500G2B0C (and I have a Broadcom WiFi / Bluetooth card that is plugged via a PCI Express adapter, hence why I have to load the AirportBrcmFixup.kext file).

I'm also attaching my EFI folder. Maybe you guys will be able to help this Open Core noob here?
