Replaces old yaml dependabot alerts and their PRs

Updated yaml to 2.2.2
Updated specification.build() with YAML.defaultOptions removal and anchors set to conditional
Tested each spec.test files and confirmed they are passing
Refined tests to be less prone to whitespace differences
Updated jest devDependencies and housekeeping
