refactor: ♻️ remove GraphCMS use local data files #60

Remove dependency on GraphCMS, move all data into local files

Removed loads of endpoints needed for gql data, all local now, just needs a bit of work for the index page and how the events/streams are dealt with.

Site is live, I merged the other branch. Thank you @spences10 and @ghostdevv for the hard work on this. Glad I finally got it built, I wish I knew what was breaking it.
