Create separate database for storing aggregated data for AI forecasting #192

We need to add the postgres database as a separate service with the following structure:

Same should be done for the weekly data.

Discussed on the weekly call on 09/03/24. Decided that the following format will be better and easier for parsing/data forecasting image
