Use Swift version 5 as consistent configurations

Remove swift version configs on target levels to use project level config set to v5.0.
Update swift version in .swift-version to 5.0 too.

I'm going to merge this PR as it is simple and a kind of clean up after merging some PRs for Swift 5 and Xcode 12.
