Some chunks are eval = FALSE and load data, we should make it easier to rerun this by having some chunks which are eval = FALSE and show = FALSE, with the eval flags being able to be turned on and off at the top. For context, I think these were here because we used to bootstrap which was time intensive, which we don't do any more. So we should just get rid of the eval = FALSE chunks altogether and get better example.
