👍 I like how easily we can test the message consuming. Maybe it is worth extracting to some tool? (later, later :D)

I'm a little sceptic on this one - when you extract some functionality to a tool, it's tempting to use it for everything, and you might end up with SyliusElasticSearchPlugin using ApiTestCase which is a pain every time a change is needed :) I'd rather test the concept on an another project and see whether it still would make sense.
