At present, the jupyter config is here https://github.com/CCPPETMR/CCPPETMR_VM/blob/c4dc2613582e8a4d79ffab51d95562b9ae7a5bf1/scripts/first_run.sh#L31
It would be better to have it in a separate script.
Obviously, we probably should re-use https://github.com/CCPPETMR/SIRF-SuperBuild/tree/master/cloud/terraform/azure/scripts and whereever this is in https://github.com/CCPPETMR/SIRF-SuperBuild/tree/master/docker, as per https://github.com/CCPPETMR/SIRF-SuperBuild/issues/91
