chore: correct README.md with next release #144

Describe the bug

With next PR from devel to master, model stats will be removed from README.md (see https://github.com/SysBioChalmers/Sco-GEM/commit/7f6638a7ac29bf359cf00905b75bc1dae10833a5). While these stats should not be present in devel, they should be in master.

Expected feature/value/output:

README.md should contain the model stats in master but not devel.

To do:

[x] After the next PR from devel to master and before making the new release, revert README.md to the version before the PR merge.
[x] Only then run increaseVersion.py, to replace the previous model stats with the new stats.

I hereby confirm that:

[x] This problem persists in the master branch of the repository
[x] A similar issue does not already exist
[x] I've considered asking this first in the Discussion forum
