fix(extraVolumeMounts): add missing features and tests

fixed extraVolumeMounts test as they were not named correctly and were never included in test run.
added missing feature from original issue allowing ConfigMaps to be mounted as well.
document the subPath and items usage in extraVolumeMounts
extended unit and deployment tests
added
chartName
config item to easily reference chart deployed Secrets and Configmaps
