Update Web5 JS to 0.7.0 and fix Vite bundling issue #62

Note that this contains a less than ideal fix for the Vite bundling issue that arose. To develop locally you'll need to: npm run build && npm run preview and NOT use npm run dev

It is a non-trivial issue that we'll have to circle back to after this week. It's only related to Vite and won't impact the quickstart or other user's pulling in the browser bundle from jsdelivr or unpkg.
