Mobile Wallet instead of DIDPay IDV Vendor instead of Vendor SIOPV2 Authorization instead if SIOPv2 Auth

Mobile Wallet might be controversial. I think it would benefit the spec to be as generally applicable as possible, so shouldn't reference DIDPay. Maybe 'Wallet' doesn't describe all the tbDEX functionality it has though

Unsure about mobile wallet but it's definitely better than making specific reference to didpay
