Use TBDs ION deployment for e2e tests and default configs #316

The universal resolver configuration for ION uses the default configuration. We should update it to point to TBDs ION infra.

When our infra is prod-ready (has gone through some auditing, sec hardening, resilience and reliability testing) -- yes!

until then think we should stick to the uni resolver
