I was setting up a local testing environment with a fresh installation of Docker today, and found some spots here that could use updating/revision.

HOWEVER, as @peterstadler pointed out in Slack conversation today, it's probably better to be following the Docker instructions on the TEI/Jenkins repo. Maybe we should update the Documentation repo to send us there.
