Removed Xcode 14.x runs (the min required version for AppStore submissions is 15.x)
added "beta" channel into the matrix to detect issues before the FLutter version becomes mainstream.

Merging it in. It seems the "beta" channel still uses an older version than the "stable" itself. (probably we need to evaluate this with time)
