As of April 26th, 2020, me and my friends tested the Jester being killed by the Infected with fists. Jester won the instant they died.

If anymore information is needed, I will happily provide it. Please fix this soon! We love these two addons and would love to play with them both!

I fully agree, an infected person can't kill a jester and turn him.

This sounds like intended behavior...
