Much like most of our other preferences, it should probably be a working assumption that most users, even at large internationals, won't bother to look at or set this preference. It's not a core function of tab software; for most people won't be a thought, and for the few for whom it is a thought, it's an afterthought. A tournament that's serious about presenting these statistics properly should be doing so directly from registration data, not as a side effect of whatever information is collected for the purposes of adjudicator allocation.
For this reason I'm very sceptical that a customisable preference is the answer. In my mind, the reason Tabbycat allows for gender to be specified at all is to assist with adjudicator allocations; diversity statistics are incidental to that. On top of that, as @tienne-B says, this would wreak havoc with translations—unless we want users to specify their label in all six languages (and counting). If we need to clarify anything, I'd rather just revert to the least specific labels: "male" and "non-male" (being an aggregation of "female" and "other"), and explain that "male" is a label name whose meaning can vary depending on how tournament staff at that tournament wished to use it. Realistically, I don't think customisable labels is a solution I'd expect to be used appropriately.
If it's really important for tournaments to be able to provide notes to accompany the diversity data, then I'd be happy for there to be a freeform "diversity statistics message" field, similar to the tournament welcome message field, into which tournaments can type anything they want. This message could default to something explaining that gender and regions are both categories whose meanings are determined by tournament staff (basically a disclaimer). If we're being fully open, I'd actually prefer to go the whole way and just say that their primary purpose is for adjudicator allocations, that these statistics are drawn from that data and should be taken with the appropriate grain of salt, and that many tournaments don't collect this information.
31d09ecbdb8961c91070b9ce749b1c1c1c60071f fixes the omission of cis from the 'male' category such that the labels are now properly mutually exclusive. However, further improvements are desirable:
978 should provide a means of self-verifying the gender recorded by the tab, although it should probably also link to the new docs page to provide context/explanation. While those pages are not absolutely secure, in practice they should be secure enough. Said docs page could also highlight this and recommend an opt-out if necessary?
