Tested on spigot 1.8.8 Java Version 8 Essentials for 1.8 CUSTOM ENCHANTS VERSION 2.3 - 2.4c

MINIGUN + PIERCING enchant = all armors are removed from the player and is drop on the ground

Looking into it, it seems weird that the armor is dropped as neither the Minigun nor the Piercing enchant should do this.

The plugin is taking the armor off then applying the damage = piercing enchant then putting the armor back again. combine this with the minigun the piercing enchant cannot cope with the high frequency hits vs putting the armor back again thats why the armors fall to the floor

The piercing Enchantment only stops the armor from blocking any damage by resetting the armor value that is seen by the damage event. The armor stays unaffected.
