The concept here's pretty simple; have some kind of marker or something similar that you can put in an item frame on a chest (or multiple) in your storage, to have villagers prioritize it when dropping items off! The idea here is fairly simple- with this, you could have an 'input' chest for a sorting system that then distributes things automatically to the rest of the storage, if you're more of a stickler for sorting than the drop off AI currently allows, or to, say, separate off some items from storage automatically to be reserved for selling. Or both. I don't know what your sorting preferences are.
This behavior WOULD override the way villagers currently prioritize things, but it'd be much nicer on organization sticklers, and could make handling items for selling a lot easier. Because let's face it, if at any point you need to sell things that don't typically come in stacks (equipment for example), it can be a chore to try and locate it. (And I think redstone nuts would enjoy the opportunity for complex automation.)
