Use custom resource from config in list page

Needed to overwrite the list page to ensure the authenticatable is loaded fixing:

Attempted to lazy load [authenticatable] on model [Rappasoft\LaravelAuthenticationLog\Models\AuthenticationLog] but lazy loading is disabled.
