Creates the first working example. #5

This request includes a working example that includes an example .Rmd file that will compile using the UNC_thesis_template.tex file.

NOTE: The UNC_thesis_template.tex is just a copy of the basic template.tex and needs to be modified to meet UNC formatting standards.
