This might be a solution to the problem about speed being always saved even between videos that have nothing in common (e.g. music and programming)

Saving speed (and other playback options) per channel, and not globally, would be very useful.
It's still nice to be saved globally, but it actually make little sense for people who play several kind of media: you definitely don't want to speed up music, while you may want to accelerate interviews or vlogs.

+1 for this issue, please. I actually came here specifically to request this feature. AntennaPod is a great example of this implementation: you can set a global speed default, but you can adjust it per show. So for example, my default is 2x, but two of the shows I listen to are either super dense in terms of the information they present, or the guests often have a heavy accents and/or poor audio quality due to being in remote areas. As such I have those two set to automatically drop down to 1.5. Hell, even if NewPipe did a default of 1x, that'd be great cause then when I go check out a song or something it would play right, but once I subscribe I can speed it up in the channel settings if I want.

Perhaps the playback speed UI could have a selector (o) don't remember ( ) remember for all videos ( ) remember for this channel.
It makes sense to save the video speed config on a channel basis because videos from the same channel tend to be similar.
This could be added as a configurable option.
It could even be possible to set the speed in an entire playlist if the user did set the speed in one of his videos (if played through a playlist).
More, the GUI could show i.e. a toast with a button saying "playing at 1.5x" and the button to set back to normal
