If anything it would be nice if instances could specify which CDN they use. They don't necessarily all use the same one and they won't all have the same privacy policy.

Of course I want to elaborate further on my reasoning against most of these changes. I'm quite busy and haven't really got a chance to do so.
I agree that the instance list needs a major makeover, but I disagree with a lot of suggestions you made. I want to make improvements too, but they're quite different in nature, due to the way I designed Piped. I'll definitely elaborate more when I get the chance to.

The Instances page is outdated.
There are instances like https://pipedapi.kavin.rocks/ and https://pipedapi-libre.kavin.rocks/ where it's not clear what the difference is supposed to be. Moreover both of those domains redirect to https://piped.video which is not even listed in that page, and which apparently is another domain for the same instance of https://piped.kavin.rocks/. Such things should be explained in a
Notes
column, which could be used for any relevant note about the instance.Another column should be added to mark the instances that use CloudFlare or other privacy invading services and analytics.
Another column should be added to display if the instances is updated or not (like Nitter does)
Tor and I2P instances are totally missing, LibRedirect pulls from that page so they can't be automatically added. If an instance offers both Onion/Eepsite and clearnet site, it should be noted. For example http://piped2bbch4xslbl2ckr6k62q56kon56ffowxaqzy42ai22a4sash3ad.onion/ should be noted as being the Onion site of https://piped.video.
The Instances page should be linked in the ReadMe. The Mirrors section should be removed from the ReadMe and inserted in the
Notes
column or in another column specific for listing mirrors of the same instance.
