fix(docs-app): adjusting how docs pulls active theme #2109

Description

Fix to how we reference and set the active theme. Theming now will add its active-theme class to the body of the page

Test Steps

[ ] npm run start
[ ] then open localhost:4200
[ ] finally switch from light to dark theme to verify everything works

General Tests for Every PR

[ ] npm run start still works.
[ ] npm run lint passes.
[ ] npm run stylelint passes.
[ ] npm test passes and code coverage is not lower.
[ ] npm run build still works.
