Added LaunchDataReader class for reading launch data CSVs
Added mock sensor classes for Barometer, IMU, and GPS

Not fully tested yet, will try to add tests for remaining mock sensors (IMU and GPS) soon but they share most of the same code with the MockBarometer which is working.
